1)sorry, but can't find any info on how to call the Custom Field into mail being sent.
Example:
Hello USERNAME.....
................
USERNAME is the Custom Field

Hi,

If you have created the custom field already, edit your newsletter and click "INSERT CUSTOM FIELD" right under the editor.

Pretty simple.
