My categories show up empty in the front end even though I have products in them

Ensure that you don't have the Zend Engine compatiblity mode turned on as this can cause many issues such as this with Interspire Shopping Cart.

You can check this by going to:

Tools -> System Information -> View Full System Info

Search for:

zend.ze1_compatibility_mode

Update your php.ini file and set this to off
