RedHat servers seem to offer both a pdf2html package and a pdftohtml package. These are two different programs and the pdftohtml one is the one that FastFind requires for indexing pdf files.
If it looks like PDF files are not being indexed at all, you may also want to double check that the pdf extension is listed in the list of extensions to crawl in the crawler settings as well as having the pdf extension associated with the PDF plugin on the crawler plugins page of the control panel.

I've installed the pdf2html package on my RedHat server but still can't index pdf files.
